Sometimes I just need a brownie and nothing else will do. Joe has been bugging me to buy some brownie mix, not a single one either but the HUGE one they have next to the register when we are at Sam’s Club. I refused for weeks and then finally in a weak moment I gave in. I made a batch and they were OK but not impressive. My brownie craving was not satisfied and I decided that I needed to go see what Pinterest had for me. When I saw these Fudgy Brownies with Chocolate Cream Cheese Frosting I knew they would do the trick. Seriously you guys, how can a brownie smothered in frosting NOT be good?

When one of the first things you need to make brownies it melt down chocolate, you know it’s got to be good. While the chocolate was melting (and not in a double boiler!) I wandered off and forgot about it. Y’all that was not a good idea, it got a little overheated and slightly grainy. I wasn’t in the mood to start over so I threw it in the mixing bowl and let it cool down a little before I added the rest of the ingredients.
You guys know that sometimes I get distracted in the kitchen and forget things, right? After I finished the batter I rubbed down my glass baking dish with Cake Release and dumped in the batter. Sounds reasonable, right? I completely forgot that I wanted to take them out of the pan before I frosted them.
I decided that it wouldn’t be a huge issue and I could work with it. I let them cool in the pan for longer than I normally would have then flipped them on the rack. Then I tried to flip them…
Yep, I cracked them right down the middle. It wasn’t a complete disaster, I got to taste the crumbs and I found out before I made the frosting that they were nice and moist. Silver linings y’all, silver linings.
I decided that they should cool down a little more because my crumbs were still warm. I left them on the rack and tried to ignore my poor cracked brownies for at least an hour. It worked out fine, it gave me time to let the cream cheese sit on the counter and get to room temperature.
I threw the frosting ingredients in a mixing bowl and whipped it up with my hand mixer so it was nice and fluffy.
Frosting them was a bit of a challenge because of the crack. I finally gave up on the idea of making them look like they belonged together and frosted each part by itself. I wasn’t all that upset about it because I got to eat on from the part that I wasn’t taking pictures of instead of having to wait!
These are so good, next time you get a brownie craving you are going to want to try these. The brownies are moist with the perfect crispy top. The frosting is creamy but not overwhelmingly sweet. These are definitely worth the effort, now I have to go…I think I need to go make another batch!
